If you’ve ever crossed the footbridge behind Hove station and been stopped in your tracks by the smell of warm butter and sourdough, you’ve already met the winner. It’s the latest venture from the team behind Oeuf Café, and they’ve brought that same high-end aesthetic to a space that feels like a proper neighbourhood heartbeat. Everything at Bayron is baked fresh every morning, with staff arriving while we’re all fast asleep so the displays are already stacked with some of the finest pastries, bread and croissants in the city by the time they open.

What keeps the weekend queues stretching down the street isn’t just the technical skill of the bakers, but the sheer creativity and originality of their seasonal specials. We’re talking cereal milk croissants and salted caramel cruffins topped with Malteser bunnies that are worth every minute of the wait. If you aren't a sweet tooth, head down for their loaded sandwiches. They use bread that was in the oven just hours prior, packed with the kind of top-tier deli meats and cheeses that also landed them a top-ten spot for the city’s best takeaway.

The shop also doubles as a high-end pantry, stocked with organic milk, eggs, and artisan loaves for your weekly shop. It’s the kind of place where people actually stop to chat over a flat white rather than just rushing for the train. Whether you’re grabbing a green custard doughnut for St Paddy's or pre-ordering a bouquet for a Sunday treat, Bayon is proof that when you nail the basics and treat the locals like family, you end up with a trophy on the shelf.

Terre à terre has been kicking the doors off the vegetarian scene for over thirty years, and their 2026 BRAVO win for Restaurant of the Year proves they’re still the undisputed heavyweight champions. As it’s one of many vegetarian spots in the city it takes a lot to not just be no.1 in their niche but the best of any cuisine in the city. It isn’t a place for polite plant-based dining, it’s a full-throttle assault on the senses. The kitchen treats vegetables with a level of creativity that makes most menus look lazy. Whether you’re a lifelong vegan or a card-carrying carnivore, a seat here is a rite of passage for any true foodie in the city.

The menu reads like a globe-trotting fever dream, but the ‘Better Batter’ remains the ultimate in-the-know dish for the veterans. We’re talking buttermilk-soaked halloumi wrapped in a proper chip-shop batter, served with vodka-spiked tomatoes and a pea-mint hash that’ll make you wonder why anyone bothers with actual cod. Then there’s the ‘Bao Wow’, pillowy steamed buns stuffed with ginger-braised halloumi and paired with Lapsang Souchong pickled watermelon. It’s no-fuss fine dining at its best, the service is sharp, and the presentation is like artwork on a plate, but you’re encouraged to get stuck in and enjoy the flavours without worrying about etiquette.

While the main room is always buzzing, the real pro move is bagging a table on the secluded terrace at the back for a long, boozy lunch. They’ve curated probably the best organic wine list around which is so good you can actually pop in just to buy a bottle to take home, and their mixology behind the bar is just as experimental as the food. If you’ve got a group that can’t decide, the ‘Terre Tapas’ is the only way to go (like a tasting menu), it’s basically a greatest-hits tour of the menu that takes the guesswork out of ordering and guarantees you won't leave with food envy.

It’s very rare for a restaurant to stay at the top of its game for three decades, but terre à terre has managed it by always staying at the cutting edge of cuisine. In a city that’s now overflowing with trendy plant-based start-ups, this Brighton legend is a reminder that the original is still the best.
